Egg Dish Casserole

Egg Dish Casserole
This is my favorite winter recipe.  It has that stick to your ribs flavor of a casserole, but I promise it won't stick to your ribs!

1 cup egg whites
1/2 teaspoon black pepper
16 oz. fresh spinach
1/2 cup diced mushrooms
1/2 cup diced cauliflower
1 t. olive oil
pinch each sea salt and black pepper
8 ounces cup nonfat cottage cheese
8 ounces Greek 0% yogurt, plain yogurt or fat free sour cream
1/2 cup reduced fat cheddar cheese

1. Pre-heat oven to 360.
2. Spray a glass ceramic dish with cooking spray. Pour in egg whites.  Microwave spinach for four minutes.  Saute cauliflower and mushrooms. Add pepper, yogurt and cottage cheese.  Add to eggwhites and stir until combined.  Sprinkle with cheese (I actually make this one without cheese and it is still good.)
3. Bake 45 minutes. Let cool 10 minutes.
